Eating healthy, enjoying a bit of fun every day, and being part of the community are important to us. We live and love better when we appreciate more. It’s how our company got its name, and its why we call the oysters we grow SMILES.

HAPPY OYSTER CO. raises premium quality Long Island oysters in Great Peconic Bay. Our SMILE oyster is the Crassostrea Virginica, or true oyster, native to North America, also known as the Eastern, Atlantic, or East Coast oyster.

Besides the sublimely delicious eating experience, what makes the SMILE a premium oyster, is the way we raise them.

Long Island native Bart Birk, our Happy Oyster Co. president, designs and builds his own gear, runs the boat, hauls the cages, and tumbles the oysters. Skipper T, chief culler, protector of marine critters, and married to Bart, handles sales and paperwork when she’s on land.

We’re a small farm. The same two pairs of hands care for each oyster throughout its life, from its start as spat, through harvest, and into the bag.

Nurtured in concert with nature

As active supporters of bay waters preservation, we practice aquaculture that respects the ecosystem to produce a sustainable marine protein food source.

Nourished in a marine environment rich in the minerals and nutrients of salt water, oysters are literally health in a shell.

SMILE oysters live and grow inside protective wire cages, placed just off the bottom of the bay waters. Regular, hands-on culling and tumbling produces the highly desired deep cup shell, filled with tender, succulent meat and those briny juices reminiscent of the sea.

HAPPY OYSTER COMPANY grows premium Atlantic oysters (Crassostrea Virginica) in the Great Peconic Bay of Long Island Sound, NY. Our seawater farm is situated within the fishtail fork of eastern Long Island. This is where aquaculture farmers Bart and Toni-Jo Birk lavish their oysters with careful, hands-on care.
